A Rainy Day Called for Comfort Food

Roasted Pesto Caprese Chicken Recipe

Ingredients

  • 2–4 boneless, skinless chicken breasts
  • Salt and freshly ground black pepper
  • 2–3 tablespoons all-purpose flour or whole wheat flour (optional)
  • ¼–½ cup basil pesto
  • 2 Roma tomatoes, thinly sliced
  • 8 ounces fresh mozzarella, sliced
  • 1–2 tablespoons olive oil (garlic confit-infused olive oil is even better!)
  • 1–2 cups cherry tomatoes
  • Fresh basil, chopped, for garnish
  • Optional: balsamic glaze for serving

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken dry and season both sides generously with salt and pepper.
  3. If desired, lightly dredge each chicken breast in flour and shake off any excess. This creates a light crust and helps keep the chicken juicy.
  4. Arrange the chicken in a lightly greased baking dish or on a parchment-lined baking sheet.
